Keli salai lemak cili padi

Aku memang jenis tak pandai sangat nak masak ikan sebab leceh nak kena siang-siang ni. Heh. Masak pon ikan koman je - kembung, selar , sardin dalam tin. Hihihihi... tapi aku suka this resepi. Ingat satu hari nanti nak try but ofkos aku akan sedaya upaya memujuk tokeh ikan tu untuk siang siap-siap. :p

Bahan-bahan
3 ekor ikan keli-dibersihkan
Cili padi *
Kunyit hidup *
Santan - dr setengah biji kelapa
Timun ladang (timun tua yang warna coklat tu) dikikis kulitnya, dibuang bahagian tengah, dan dipotong kecil
Sebiji limau nipis
Garam dan perasa

Cara-cara
Ikan keli disapukan kunyit dan garam kemudian disalai hingga kering..(kalau malas nk salai..bakar dalam oven pun boleh)
Bahan-bahan bertanda * ditumbuk halus.

Creamy garlic + cili api spaghetti.

Secara basic-nya nak bikin aglio olio tapi disebabkan tekak ni Jawa ni nak makan pedas, so kita simplified skit ikut selera masing-masing ye.

Bahan-bahan:
Spaghetti
Cili api (racik halus)
Garlic (racik halus)
Serbuk lada hitam
Serbuk garlic (boleh beli kat rak supermarket)
Sekeping cheese
Sedikit sayur (wa hentam sayur salad je pasal takde sayur lain dalam esbok tu. Hahaha)
5 ekor udang sederhana besar potong dadu
4 batang crab stick
+ kalau bubuh sedikit tomato potong kecit2 pon mesti sedap.

Cara-cara:
1. Rebus spaghetti sampai masak. Tips: Bila spaghetti dah masak, tutup api and biarkan je spaghetti tu dalam air tu lama skit supaya dia lebih lembut.
2. Panaskan olive oil.
3. Tumiskan bawang putih sampai naik bau. Masukkan cili api. Masukkan serbuk lada hitam. Masukkan serbuk garlic.
4. Dah bau best, masukkan udang and crabstix. Goreng je sampai agak2 udang dah tukar kaler tu.
5. Tos spaghetti, and masukkan spaghetti dalam tumisan tadi. Gaul kasi rata.
6. Masukkan cheese sekeping tu. Kalau nak masuk parmesan cheese lagi sodap la kot. Gaul kasi rata. Kalau masak banyak tu, letaklah cheese banyak-banyak.
7. Tambahkan garam. (Wa suka guna Maggi secukup rasa) .. hiks.
8. Gaul sesuka hati.
9. Tutup api and dah boleh hidang.
10. Letak sayuran and gaul rata sayuran itu tadi.

Dah. Boleh ngapp!
*ni anggaran untuk dua orang makan je.

p/s: letak cili tu lebih skit aaaa .. kasi kawww!

Sloppy Joes.

The trick to this recipe is to brown the meat well, on high heat. Don't crowd the pan, work in batches, and don't stir the meat until it is well browned on one side. It helps to use a large cast iron pan, or an anodized aluminum pan, as these pans can handle the heat and are relatively stick-free.

INGREDIENTS
1 Tbsp olive oil
1/2 cup minced carrots (can sub chopped bell pepper)
1 cup chopped onion (about 1 medium onion)
1/2 cup chopped celery
2 cloves garlic, minced
Salt
1 1/4 lb ground beef
1/2 cup ketchup
2 cups tomato sauce (or 1 15-ounce can whole tomatoes, puréed)
1 Tbsp Worcestershire sauce
1 Tbsp red wine vinegar
2 Tbsp brown sugar
Pinch ground cloves
1/2 teaspoon dried thyme
Pinch cayenne pepper
2 turns of freshly ground black pepper
4 hamburger buns

METHOD
1. Heat olive oil in a large sauté pan on medium high heat. Add the carrots and sauté for 5 minutes. (If you are using bell pepper instead of carrots, add those at the same time as the onions.) Add the chopped onion and celery. Cook, stirring occasionally until onions are translucent, about 5 more minutes. Add the minced garlic and cook for 30 more seconds. Remove from heat. Remove vegetables from the pan to a medium sized bowl, set aside.

2. Using the same pan (or you can cook the meat at the same time as the vegetables in a separate pan to save time), generously salt the bottom of the pan (about 1/4 to 1/2 teaspoon). Heat the pan on high. Crumble the ground beef into the pan. You will likely need to do this in two batches, otherwise you will crowd the pan and the beef won't easily brown. Do not stir the ground beef, just let it cook until it is well browned on one side. Then flip the pieces over and brown the second side. Use a slotted spoon to remove the ground beef from the pan (can add to the set-aside vegetables), salt the pan again and repeat with the rest of the ground beef.
If you are using extra lean beef, you will likely not have any excess fat in the pan. If you are using 16% or higher, you may have excess fat. Strain off all but 1 tablespoon of the fat.

3. Return the cooked ground beef and vegetables to the pan. Add the ketchup, tomato sauce, Worcestershire sauce, vinegar and brown sugar to the pan. Stir to mix well. Add ground cloves, thyme, and cayenne pepper. Lower the heat to medium low and let simmer for 10 minutes. Adjust seasonings to taste.

Serve with toasted hamburger buns.
Serves 4.

English Muffins

Rasa macam teringin nak bikin English Breakfast Muffin ni ... hmmmm. So, kita gugel resepinya. Rasanya dapat from allrecipe.com (dah tertutup lak linknya) .. howoe....

Ingredients

235 ml milk
25 g white sugar
7 g active dry yeast
235 ml warm water (110 degrees F/45 degrees C)
50 g melted shortening
750 g all-purpose flour
6 g salt
Directions

Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in the sugar, stirring until dissolved. Let cool until lukewarm. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.

In a large bowl, combine the milk, yeast mixture, shortening and 3 cups flour. Beat until smooth. Add salt and rest of flour, or enough to make a soft dough. Knead. Place in greased bowl, cover, and let rise.

Punch down. Roll out to about 1/2 inch thick. Cut rounds with biscuit cutter, drinking glass, or empty tuna can. Sprinkle waxed paper with cornmeal and set the rounds on this to rise. Dust tops of muffins with cornmeal also. Cover and let rise 1/2 hour.

Heat greased griddle. Cook muffins on griddle about 10 minutes on each side on medium heat. Keep baked muffins in a warm oven until all have been cooked. Allow to cool and place in plastic bags for storage. To use, split and toast. Great with orange butter, or cream cheese and jam.
